Adai Dosai and tomato chutney

Adai Dosai
Ingredients :
Step 1:
kadalai paruppu - 1 cup
tuvaram paruppu - 1 cup
ulundu - 1 cup
pulungal arisi - 1 cup
pacharisi - 1 cup
paasi paruppu - 1/2 cup
javarisi - 1/4 cup
Wash and Mix step1 together and soak it in water for 3 hours.
Then grind it like dosai maavu.

Ingredients :
Step 2 :
Perunjeeragam - 1 table spoon
Dry Chill - 20
Perungaayam - i teaspoon
turmeric powder - 1/2 teaspoon
salt to taste
Mix Step2 together and grind it in mixi and keep aside.

Ingredients :
Step 3 :
big Onion - 3 (chop nicely)
Carrot - 1 (shredded)
curry leaf (chopped)
oil
grated Cononut - 1 cup.
musturd

Directions :
In a pan heat 1 table spoon of oil and fry musturd and add remaining items in step3 one by one.
Mix Step1 , Step2 and step3 together and add salt if needed of your taste.
Heat dosai pan and Make it like dosai.
serve hot and enjoy.
Tomato chutney goes well for this dosai.


Tomato Chutney :
Ingredients :
Oil - 1 table spoon
Musturd - 1 tea spoon
Urud dhal - 1 tea spoon
Dry chilli - 10 nos.
Preungaayam powder - 1/4 tea spoon
salt (of your taste)
curry leaf
Coriander leaf
Big onion (3)
green chill - 3
tomato (2)
tamarind (small ball size)

Directions :
Heat Pan with 1 table spoon of oil and crack musturd, urud dhal, dry chilli, perungayam, curry leaf and add
 remaining all other items and fry it for 10 minutes. Then grind it in mixi.

Chicken Uppu Curry

Ingredients:
Chicken - 1 Kg
Small Onion  - 15 nos (cut into lengthwise )
Dried Chilli - 15 nos (7 for fry and reminding cut into 2 to 3 pieces)
Black Pepper Corn - 1 table spoon
Fennel - 1 table spoon
Curry Leaves - 3 nos
Cooking Oil - 1 table spoon
Urad Dhal - 1/2 table spoon
Broken Cashew Nuts - 10 nos.

Directions:
1. Cut the chicken into small pieces (wash it) and keep aside.
2. Heat a pan and  fry the following ingredients (A, B, C) one after another without oil.
                                      
    A.  7 Nos of Dry Chillies
    B.  Black PepperCorn
    C.  Fennel Seeds

Grind A,B,C together coursely using dry grinder. Keep it aside.

3. Heat the cooking pan and pour 1 teaspoon of oil.
4. Add the chicken, turmeric powder, right amount of salt and saute it for 5 min and keep it aside.
4. In another pan, heat 1 table spoon of oil and fry the urud dal, remaining dried chillies, curry leaf one after another another.
5. Add the onion and saute it until it turns golden color
6. Then add (no.3) and saute it until the chicken is cooked.
7. Then add (A,B,C powder) and cashew nuts and mix well. keep it for 5 to 10 mins.
8. Serve hot.

Mutton Uppu curry

Ingredients:
Mutton - 1 Kg (boneless)
Small Onion  - 15 nos (cut into lengthwise )
Dried Chilli - 15 nos (7 for fry and reminding cut into 2 to 3 pieces)
Corriander powder - 2 teaspoon
Cummin Powder- 1 table spoon
Fennel Powder - 1 table spoon
Black Pepper Corn - 1 table spoon
Fennel - 1 table spoon
Curry Leaves - 3 nos
Cooking Oil - 1 table spoon
 urad dal - 1/2 table spoon
Broken Cashew Nuts - 10 nos.

Directions:
1. Cut the Mutton into small pieces (wash it) and add turmeric powder, little bit of salt, fennel power, cummin
    powder and add 2 cups of water and cook it well using pressure cooker.
2. Heat a pan and  fry the following ingredients (A, B, C)one by one without oil.
                                        
    A.  7 nos of drychillies
    B.   Black PepperCorn
    C.   Fennel Seeds

And grind  A,B,C together like a powder. keep it aside.

3. In a pan heat 1 table spoon of oil and fry urud dal, remaining dried chillies, curry leaf one by one.
4. Add the onion and saute it until it turns golden color
5. Then add (no.1 cooked mutton) and saute it until the gravy looks thicker.
6. Then add (A,B,C powder) and cashew nuts and mix well. keep it for 5 to 10 mins.
7. Add salt as needed and serve hot and enjoy.
